Carpet shell

On the Mediterranean, the clam is known as Palourde or Clovis. This oval and flattened shellfish is about five inches tall. The color of the shell varies from white to black and gray to yellow. The clam seems to have a diamond pattern and is always mottled. The taste of the delicate and tender meat is greatly appreciated and reminds sometimes of a spicy artichoke.
