Sea lavender

Sea lavender, or sea aster, often grows in places where a year earlier glasswort has grown , but also grows in the vicinity of glasswort. The name ‘sea lavender’ probably owes this sea vegetable to the elongated leaves (ears). The vegetable is slightly less salty than glasswort and is available from mid-March to June. Sea lavender can be prepared in the same way as glasswort.
